Best practice? Allocating NICs

Ok, here's a question for the panel.
I've got two gigabit NICS in my DL360 G3 server. There's no space to drop
any more in (except maybe via USB1.1).

Initially I had one for the host and one for a VM.
I added a second VM and allocated it to the first NIC that also supplied the
host.
I would like add a third in the near future.

That worked fine until I installed the full HP support pack, which caused
the NIC to fail in the guest as "already allocated".

So what's the best way?
- keep one for host and one for ALL guests
- dump the host altogether (would prefer not to)
- rip the support pack out and let it reuse the first NIC

What do you guys do, who have half a dozen VM?
